I don't know how I managed to bring home a box of truffles from Coco Rouge and not dig into them within a few minutes. I actually waited 12 hours between buying them and photographing them...I wanted to make sure the light was natural and that the truffles looked beautiful, and not slightly yellowed or overexposed. Rest assured - any truffles that were cross-sectioned were promptly and eagerly eaten.
I won't say much about the people behind Coco Rouge- you can do a quick google search and read what others have written. I simply appreciate their product - it is beautiful, clean, and sensual, above all. And fun to photograph.
Sometimes when I've gone chocolate shopping, I try something and the experience is instantly forgettable. Either I've tasted it before or something is lacking. Perhaps balance, perhaps texture, perhaps quality. Coco Rouge truffles are outstanding on those three measures, and a fourth one as well - creativity. The appearance of each truffle is picture-perfect, and each truffle is like a small treasure chest, filled with a rich surprise. My current favorite is Cassius (with the gold leaf) - a butterscotch caramel made with single malt scotch. Here are a few others I tried today:
